Creamy Gluten-Free Mac & Cheese

  • 12 oz gluten-free elbows
  • 4 tbsp butter
  • 2 garlic cloves, minced
  • 3 tbsp gluten-free flour
  • 3 cups whole milk
  • 2 tsp garlic powder
  • 1 tsp ground mustard
  • 1 tsp onion powder
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup shredded white sharp cheddar cheese
  • ½ cup shredded parmesan cheese
  • ½ cup shredded gruyere cheese
preparation
  1. Preheat oven to 350F.
  2. Butter a 3-quart baking dish.
  3. Prepare pasta al dente, drain, drizzle with oil, gently mix and add to baking dish. Set aside.
  4. In a medium saucepan over medium heat, melt butter.
  5. Add garlic and let cook until fragrant, about 2 minutes.
  6. Add flour and whisk until incorporated and smooth.
  7. Add milk to flour mixture gradually, mixing well.
  8. Add garlic powder, ground mustard, onion powder, paprika, salt, and pepper. Mix well to combine. Continue to cook over medium heat, stirring until slightly bubbly and thickened.
  9. Reduce heat to low, add cheese, reserving about ¼ cup. Mix well until cheese is completely melted.
  10. Pour cheese mixture over pasta and gently mix. Sprinkle remaining ¼ cup of cheese on top of pasta for added texture.
  11. Bake for 15 minutes.
  12. Sprinkle CauliCrunch Original Flavor cauliflower crumbs over pasta and cook for another 10 minutes, taking care not to burn crumbs.
  13. Remove from oven when crumbs are golden brown.
  14. Serve and enjoy!
